How It All Began

Lori at ArnoldsFor nearly 17 years, I was the owner and founder of Arnold’s Fabulous 50’s and 60s Drive-In in Decatur, IN. People would travel from ALL over the state (and other surrounding states) take to a blast into the past and eat some delicious food!

Prior to that, I was the proud co-owner of Dawson’s Root Beer Stand, an iconic restaurant in Fort Wayne, Indiana. I was out there 8 months pregnant serving our customers on my roller skates.

Lori and Steve WeddingIn 2014, I got re-married to the love of my life and moved to Fort Wayne so we could begin a new chapter.

I found myself following the Food Truck explosion on TV and show interest in food trucks grow locally as well.

I began researching and getting in touch with various Food Truck owners in the Indianapolis area and even New York City. Both of those Food Trucks were featured on the popular Food Network Show “Eat Street.”

In late 2015, I just felt like the timing was right to dive in…head first.

I decided to serve something totally different than the other Food Trucks in operation around the Fort Wayne area today.

And I mean, who doesn’t love a Gourmet Grilled Cheese sandwich? I want my customers to experience the MANY ways to indulge in a Gourmet Grilled Cheese sandwich.

I also make other delicious in-home items, such as my famous homemade pulled pork. You HAVE  to try it on your next sandwich at Who Cut the Cheese??

As I was putting together the menu, I found myself saying, “This ain’t your Mama’s Grilled Cheese…but it could be!!”

As far as my menu items, I think they are all awesome!! I have different Gourmet Grilled Cheese covering many discerning taste buds.

Some of the names of my Gourmet Grilled Cheese sandwiches include:

  • The Godfather
  • Baby Got Mac
  • The Tin Cap
  • 3 Little Pigs
  • Go Fig Or Go Home
  • The Morning After
  • Oh My Gouda

Along with these, we will have fries and loaded tater tots. Soups will be served seasonally, but of course, one of them will be tomato soup. To name the ingredients of each sandwich would go on forever, as each one has its own unique twists and flavors.

On September 26, 2015 – Who Cut the Cheese?? went to the Art at the Riverside in Leo, IN. There were 9 food trucks there to support the big arts and crafts event. Each year, the trucks compete for four awards: Best Side, Best Entree, Best Dessert, and Best Truck Design. I won 3 of the 4 awards, which were decided by four local Fort Wayne judges. The only category I didn’t win was Best Entree, and we are hoping to win all 4 categories next year!

All of the bread will be baked fresh daily from GK Bakery and Teds Market. I will only be using top quality cheese from Murray’s Cheese Shop and Nolts from here in Fort Wayne.

Many of the vegetables that will be topping certain Gourmet Grilled Cheese sandwiches will be grown in my garden at home or grown locally.

 

I’m so excited to get started this summer! Everyone who knows me will tell you what a “people person” I am. I love to interact with my customers on a daily basis. I love getting to know them on a personal level.

 

lori and tobyMoving from location to location will give me the chance to meet so many people all over Fort Wayne and the surrounding areas, and I can’t wait!!  I will say that I have never driven a vehicle of this size and magnitude, EVER!!! So as long as I’m parked…you’re probably safe. Hopefully, I have peaked your curiosity to come experience “Who Cut The Cheese??”

I am also the proud Mother of 2 awesome children: Kaley, 27, an All-Star Cheer  and Dance Coach in Chicago, and Max, 22, who is a Junior at Purdue University.

In my “free time” this summer, you can catch me spending time with my awesome family, our fur children, lounging by the pool, and gardening!
